Mhadjeb
المحاجب

The undisputed king of Oran street food. Thin semolina crepes folded around a filling of slow-cooked onions, tomatoes, peppers and harissa — then griddled until crisp and blistered. Sold every morning from 6am onwards by vendors with huge iron pans on portable stoves. A sfenj and a glass of sweet mint tea is the classic Oranais breakfast.

Cut into squares and sold from trays at market stalls, patisseries and after Friday prayers. Sweet, floral and deeply satisfying — the taste of Algerian celebrations.
